Sodium tripolyphosphate, a salt of tripolyphosphoric acid Na5Р3О10, is a crumbly white powder that is well soluble in water. Often used with other phosphates and citrates. One or in combination with other stabilizers is used in the production of cream, condensed milk, milk powder and cream.
